- 2 packages Sunsweet dried apricots
- 1 cup Sugar
- 1 tsp Lemon juice
- 2 Pie crust
- 1 tsp Cinnamon
Cover apricots with water in medium size pan, add sugar and bring to a boil. Simmer until apricots are tender. Drain excess water and smash apricots with a fork or pastry cutter. Pour mixture into pie crust and add 2nd pie crust for top. Poke several vent holes with a fork. Sprinkle with cinnamon and sugar. Bake at 400 degrees about 30 minutes or until crust is browned.
