
Carrot Salad

- 2 or 3 medium carrots, cleaned and grated
- 1 medium apple, cored and cubed
- 1/2 cup Sunsweet raisins
- 1 TB. lemon juice
- Dash of salt
- 1/4 tsp. nutmeg
- 1/4 to 1/2 cup mayonaise
Mix ingredients together, adding mayo or lemon juice for preferred consistency. Chill at least an hour; two hours is better. Stir before serving. Keeps well in refrigerator.
