Chocolate and coconut snack bars

Ingredients
  • 3 oz Sunsweet Thai Coconut
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pecans
  • 1 cup rolled oats
  • 1 tsp vanilla extract
  • 8 oz honey
Instructions

In large bowl combine all ingredients until evenly distributed. Spread onto rectangular 9x11 dish about 1 inch thickness. Place in refrigerator to chill for 2 hours. Cut into squares. Optional: sprinkle top with additional coconut if desired.
