Chocolate Sugar Plum Cookies

Ingredients
  • 1 Cup Sunsweet PlumSweets Diced Prunes Covered in Dark Chocolate
  • 1 Cup Unsalted Butter
  • 1 Cup Granulated Sugar
  • 1/2 Cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 Large Egg
  • 1 tbsp Water
  • 2 1/4 Cups All-purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
Instructions

Preheat oven to 375. Mix together butter and both sugars on high speed until fully combined (2-3 minutes). Add the egg, vanilla, and water, and beat another minute on medium speed until fully combined. Add the flour, baking soda, and salt and beat on low speed until combined. (Do not over-beat.) Fold in the diced Sunsweet PlumSweets with a spatula until evenly distributed. Refrigerate dough for at least 30 minutes to prevent over-spreading. Drop dough by rounded tablespoons onto baking sheets lined with parchment paper. Bake for 10 minutes, or until golden brown, then remove to a wire rack to cool.
