Christmas Day Date Coffee Cake

  • 1 cup Sunsweet Chopped Dates
  • 1 1/2 cup & 1 Tbsp Brown Sugar
  • 1/4 cup Sunsweet Prune Juice
  • 2 1/2 cups All purpose flour, sifted
  • 1/2 tsp salt
  • 2/3 cup Butter
  • 2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 1 1/2 cups Buttermilk
  • 2 eggs Eggs, beaten
  • 1 tsp Vanilla
  • 1 tsp Rum extract

Preheat oven to 350 F. Grease bottom & sides of 11 x 9 baking pan. In small saucepan, heat chopped dates, 1 Tbsp brown sugar and prune juice for 5 minutes until thickened, set aside. In large bowl, combine flour, 1 1/2 cup brown sugar and salt. Cut in butter until mixture is course crumbs, set aside 1/2 cup. Stir baking powder, baking soda, cinnamon into remaining crumb mixture.
In medium bowl, combine eggs, beaten, buttermilk, vanilla and rum extract. Add all at once to flour mixture, stir until moistened. Spoon batter into prepared pan. Pour Date mixture onto batter, then sprinkle reserved crumb batter over this. Bake 40 to 45 minutes, until toothpick in center is clean. Serve warm with whipped cream or greek yogurt, if desired.
