- 2 cups unbleached flour
- 1 teas baking powder, sifted
- zest from one lemon zest from one lemon
- 1/4 teas salt
- 1 stick butter, softened
- 1/2 cup sugar
- 1/2 cup packed dark brown sugar
- 1 large egg
- 1 cup Sunsweet Dates, pulsed in food processor
- 1 teas vanilla
In kitchenaid stand mixer, use a flat beater to mix together butter and sugars until well blended. Add egg, vanilla and lemon zest. Sift together flour and baking powder and add salt. Mix well and add dates until well blended. Place dough in fridge until chilled, at least 1 hour.
Heat oven to 350 F.
Using a one inch cookie scoop, place dough balls 2 inches apart on sheet pan lined with parchment paper. Flatten slightly and bake for 12-14 minutes.
Cool on cooling racks.
