FEEL GOOD STUFFED ACORN SQUASH

Ingredients
  • 1/2 CUP CHOPPED SUNSWEET AMAZIN PRUNES
  • 2 HALVED AND SEEDED ACORN SQUASH
  • 1 CUP WILD RICE
  • 1/2 CUP CHOPPED PORTOBELLO MUSHROOMS
  • 1/2 CUP SLICED SPINACH
  • 1/2 CUP CHOPPED ONION
  • 1/2 TEASPOON SALT
  • 1/4 TEASPOON PEPPER
  • 3 CLOVES, CHOPPED GARLIC
  • 2 TABLESPOONS BROWN SUGAR
Instructions

HALF AND DE-SEED ACORN SQUASH. RUB BROWN SUGAR AND A LITTLE BUTTER INSIDE ACORN SQUASH. ROAST SQUASH FOR 40 MINUTES AT 400 DEGREES UNTIL TENDER. MEANWHILE SAUTE ONIONS, MUSHROOMS, AND GARLIC IN EVOO. ADD SUNSWEET AMAZIN PRUNES AND SPINACH. SAUTE UNTIL TENDER, ABOUT 5 MINUTES. COOK WILD RICE. COMBINE RICE AND YOUR SAUTE MIXTURE AND ADD SALT AND PEPPER. STUFF ACORN SQUASH WITH MIXTURE.
