Grandma’s Prune Cake

Ingredients
  • 1.5 Cups Sunsweet coarsely cut cooked prunes
  • 1 tspn baking soda
  • 1/4 tspn salt
  • 1 T nutmeg
  • 1 T allspice
  • 1 Cup corn oil
  • 1.5 Cups sugar
  • 3 eggs
  • 1 Cup buttermilk
  • 1 Cup chopped walnuts
  • 1 tspn vanilla
Instructions

Sift flour, salt and spices together and set aside. In a large bowl, beat together oil, sugar and eggs; add vanilla. Add dry ingredients; add buttermilk, soda, prunes and nuts. Pour into ungreased 9-inch tube pan.
Bake at 350°F for 1 hour. About 15 minutes before cake is done, prepare glaze. Pour hot glaze immediately over cake in pan. When cool, remove.

Glaze Topping for Prune Cake:
1 c. sugar
1/2 c. buttermilk
1/4 c. butter
1/4 c. light corn syrup
1/2 tsp. baking soda
1/2 tsp. vanilla
Put all ingredients into saucepan. Boil 10 minutes.
