Healthy Plum Cookies

Ingredients
  • 1/2 cup Sunsweet dried plums (prunes) chopped
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg room temperature egg
  • 1 stick room temp butter unsalted
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup oats (quick or regular)
  • 1 tsp. vanilla
Instructions

Pre-heat oven to 350 F. Mix on medium the sugar and butter until blended. Add egg, salt, cinnamon and vanilla. Mix well. Add flour and oat and mix well. On low speed, add in prunes.

On cookie sheet, place a heaping teaspoonful 3 per row. Make 2 dozen. Bake at 350 for 10 minutes on center rack. Cool on cookie sheet one minute then put on wire rack to cool. Store in airtight container.
