- 2 packages Sunsweet chopped dates-8 oz
- 1 cup water
- 2 cups flour, self rising
- 2 cups Quick oats
- 1/2 cup brown sugar
- 1 cup butter, softened
- 1/4 cup sugar, granulated
In a saucepan over medium heat, combine the chopped dates and water. Bring to a boil & cook for 10 minutes, stirring occasionally. Then set aside to cool.
In a large mixing bowl, combine flour, oats, brown sugar, and butter & rub together until all ingredients are uniform.
Spray a 9 x 13 x 2 pan with nonstick cooking spray or line with parchment paper. Put 1/2 of the dry mixture in pan & pat down with fork. Add dates to top & evenly spread. Put remaining dry mixture on top & pat it down. Bake at 350 degrees for 25-30 minutes. Let cool & cut into squares.
Optional: Put 1/8 cup of granulated sugar into a small jar & top with 1 drop of red or green food color. Put lid on jar & shake. May sprinkle onto baked date bars for a festive look.
