Sunsweet Bread Pudding

  • 1/2 cup Sunsweet Dried Cranberries
  • 1/2 cup Sunsweet Dried Prunes, diced
  • 4 cups Thick Sliced Bread, Day Old, Diced
  • 2-3 cups Eggnog (brand of choice
  • 1/2 tsp Ground Nutmeg
  • 1 tsp Ground Cinnamon
  • 1/8 cup Brandy of choice (or omit if preferred)

Preheat oven to 350 F. In medium heavy saucepan, soak Sunsweet prunes and cranberries in brandy for approx 1 hr. Once liquid absorbed, add eggnog, nutmeg and cinnamon and warm over medium heat until a simmer, stirring occasionally. Meanwhile, spray 9x11 casserole dish with non-stick spray and add bread evenly. Pour fruit/eggnog mixture over bread thoroughly and allow to soak in. Cover and bake for 30 minutes. Remove cover and bake and additional 5-10 minutes or until top begins to brown slightly. Remove and serve warm or room temperature. Enjoy! (The sweetness of the prunes with the tart cranberries with the creamy eggnog is heavenly!)
