

Sunsweet Hummingbird Cake

- 3 Cups All Purpose Flour
- 1tsp Baking Soda
- 1tsp Salt
- 1 cup Sugar
- 3 Eggs
- 1 cup Vegetable Oil
- 1 tsp Vanilla Extract
- 1 cup Pecans (chopped)
- 1 cup Bananas (ripe mashed)
- 1 cup Sunsweet Dates (chopped)
- 1/2 cup Sunsweet Diced Prunes
- 1/2 cup Sunsweet dried cranberries
- 1tsp Cinnamon
Combine first 4 ingredients. Stir in eggs and oil until moist. Stir in remaining ingredients. Pour batter into 3 greased and floured 9 inch cake pans. Bake at 350 degrees for apx. 30 until a wood skewer inserted in the center comes out clean. Cool and frost with cream cheese frosting (8 ounces cream cheese and 1/2 cup butter mixed with 16 ounces powdered sugar and 1 tsp vanilla slowly added. Beat until mixed and smooth)
