- 3 Sunsweet dates , pitted , chopped
- 1/4 Cup Hemp hearts
- 1/4 Cup Shredded coconut, unsweetened
- 1/3 Cup Raw walnuts
- 1/2 tsp Cinnamon
- 2 pinches Salt
- 1/4 Cup Fresh cranberries, diced
- 1 Cup Frozen cherries
- 1/2 tsp Vanilla
- 1/2 Cup Roasted sweet potato
Blend all 5 dry ingredients to fine consistency. Add in the dates and pulse blend until mixture forms a crumble. Set aside.
In a small oven safe bowl put all the wet ingredients except the roasted sweet potato. Bake on 350 degrees 15 to 20 minutes or until hot and fork tender and cooked down. Then gently add in the sweet potato (do not mash or over mix). Place back in the oven for about 5 to 10 min so the ingredients can marry. ( the smell is divine!)
Remove from oven place in a beautiful bowl and top generously with the crumble. A sprinkle of coconut flakes and a cinnamon stick on top for presentation. It is optional but looks scrumptious . Can be served warm with a meal or cold with whipped cream as a dessert.
