Sweet Potato Suffla

Ingredients
  • 1/2 cup Sunsweet dried raisins
  • 5sm or 3 lg 5 small sweet potatoes
  • 1 tbsp Cinnamon
  • 1tsp Vanilla extract
  • 1/2 cup Cashew milk
  • 2 cups Gluten free all purpose flour
  • 1/2 cup Cane sugar
  • 1/2 cup Water
Instructions

Baked sweet potatoes for 1 hr and 45 mins
After baking mash potatoes so the lumps disappear
Mix gluten free flour, Cinnamon and sugar together
Mix in cashew milk, water and vanilla extract
Combine ingredients on stove top light heat
Add raisins to stovetop
Continually stir until mixture thickens add water little by little if needed 1/3 of a cup at a time or 3 to 4 tbsp at a time depending on the constancy
After the mixture has thickened pour mixture over mashed sweet potatoes and bake for 30 minutes at 350 degrees
