Sweet potatoes Marshmallow goo with Sunsweet dates

  • 1 cup milk
  • 2/4 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 3 eggs
  • 2 table spoon Sun sweet dried dates (blended)
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 1 teaspoon of orange juice
  • 2 cups a bag of marshmallows
  • a dash salt
  • 5 TSP butter
  • 1/2 cup sugar
  • sprinkle cinnamon

Boil the sweet potatoes for 15-20 minutes on medium heat and let it cool. Peel and then smash it up and set aside. Pre-heat oven for 350.

Blend the eggs, milk, brown sugar, vanilla extract, sun sweet dried dates, orange juice, and a handful of marshmallows in a mixing bowl.

Set it in a cooking dish.

For the topping, combine salt, flour, butter, and more sugar. Stir in the pecans. Spread it on top. Sprinkle a handful of marshmallow goodness on top as well.

Bake for 15 to 30 minutes. Look for brownness on top and test if stick with a spoon. Sprinkle cinnamon. Yummmmmy!
