
Sweet & Sour Stuffed Cabbage

- 1+ Head Cabbage
- 2 pounds Ground Lamb
- 2 Cups Minute Rice
- 1 Bunch Scallions
- 2 Bunches Parsley
- 1 32oz 1 sm can Tomato Sauce
- 1 32 oz Diced Tomato
- 1 pkg Sunsweet Prunes
- 1 pkg Sunsweet Dried Apricots
- to taste Salt
Mix lamb, rice, parsley leaves, chopped scallions and salt to taste. Add the small can of tomato sauce together. Let sit overnight. Wrap a small handful into the cabbage and place in a large pot.
Add the prunes and dried apricots over the top of the stuffed cabbage. Then pour the 2 large cans of Tomatoes over them. Simmer low for 1-1.5 hrs until done.
