Sweet & Sour Stuffed Cabbage

Ingredients
  • 1+ Head Cabbage
  • 2 pounds Ground Lamb
  • 2 Cups Minute Rice
  • 1 Bunch Scallions
  • 2 Bunches Parsley
  • 1 32oz 1 sm can Tomato Sauce
  • 1 32 oz Diced Tomato
  • 1 pkg Sunsweet Prunes
  • 1 pkg Sunsweet Dried Apricots
  • to taste Salt
Instructions

Mix lamb, rice, parsley leaves, chopped scallions and salt to taste. Add the small can of tomato sauce together. Let sit overnight. Wrap a small handful into the cabbage and place in a large pot.

Add the prunes and dried apricots over the top of the stuffed cabbage. Then pour the 2 large cans of Tomatoes over them. Simmer low for 1-1.5 hrs until done.
